WHere is an easy take on a beverage found on a new cocktail list. Designed as a batch premix that's loaded full of tastes of the holiday season, making it excellent for your festive gathering. Reserve the remaining cordial to use in breakfast cocktails, desserts, or to mix another batch of the drink.

The Bikini Cocktail

Makes enough for 10 guests

To make the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Premix (makes 850ml, enough for 10)

400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Method

For the Citrus Syrup: Combine the listed components in a saucepan, bring to a gentle boil, mixing so the sugar melts. Next, turn off the stove allowing it to reach room temperature fully. Transfer into a clean bottle, close it and store chilled, it can be stored for about one month.

For the Premix: Pour the specified spirits and syrup in a large bottle, allow it to infuse for 60 minutes, then filter it , ideally through a fine cloth, to ensure it's completely strained.

To serve: Add 85ml of your batch mix into your mixing glass containing ice, and agitate carefully for about 60 seconds to cool it down. Strain into a cold coupe glass or equivalent, decorate with a few cranberries and finish using a brief mist of the essential oil over the drink.
